Wrapped Asparagus and Chives

During a recent conference call with pediatric obesity experts at the Center for Disease Control in Atlanta, I learned about what sounds like a great program in Maine, “Keep Me Healthy”. Catchy for them but the abbreviation for California wouldn’t work for us. Their program is simple to remember. “5210” is all over on posters in healthcare facilities for kids.

2 hours maximum TV time
1 hour exercise
0 sugary beverages

Sounds like a good PIN to remember

To get one of your servings of vegetables, try this appetizer. And it looks so cool you will impress your friends. The ground temperature reached 65 degrees in Fresno, so asparagus is back.

Wrapped Asparagus and Chives

1 bunch asparagus, woody ends snapped off
1 bunch chives
1 tablespoon low fat mayonnaise
1 teaspoon Dijon mustard
¼ pound thinly sliced turkey breast

Steam or boil the asparagus until just crisp tender. Chill it. Or not. Mix the mayo and Dijon. Spread part of a slice of turkey with a little of the mayo mixture. Lay a spear of asparagus and a chive artistically on the turkey. Roll it up and serve. This is a good variation from the usual prosciutto wrapped asparagus.
