Roasted, then Mashed Sweet Potatoes

3 pounds sweet potatoes, peeled and cubed into 1” pieces
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup nonfat milk
¼ cup fresh orange juice
¼ cup dried cranberries
1 Tablespoon maple syrup
Salt and freshly ground pepper to taste

Preheat the oven to 375 degrees. Roast the cubed sweet potato until it is tender and beginning to carmelize, about 30 minutes. Meanwhile, in a small saucepan, heat the milk, but not until boiling. Add the cranberries, orange juice, cinnamon, and nutmeg. Set aside. When the potatoes are done, mash them in a large bowl with a potato masher or a large spoon adding the milk mixture. Season with salt and pepper to taste and stir in the maple syrup. Serve warm.

What is the sugar content in the roasted then mashed Sweet Potatoes? I noticed it had both maple syrup and orange juice which usually have a high sugar content? But it is not listed ?

Note: The nutritional analysis for the recipes started just after I published that one. I can ask my dietitan colleague to do and analysis for this recipe and post it later. Meanwhile, you could Google the sugar content of the ingredients and divide it by the number of people you are serving. thanks for writing. Dr. M
