If anyone has ventured to make the poblanos stuffed with quinoa, please accept my apologies. The recipe has been corrected to "3 cups cooked quinoa" rather than "3 cups quinoa, cooked." Quinoa is a really good, robust grain packed with protein and calcium, but in moderation.

wow! made half first time around. now made the full batch. very good had it with a salmon steak for dinner.
