I used to try to work my way around all those knobs with a vegetable peeler when peeling ginger. Then I learned to scrape the ginger with the edge of a spoon. This works really well.
Try freezing it first; the skin comes off like thin paper! The freezing part is just for longevity as we always buy more than we need for certain dishes. Note: Great tip. I freeze it also. Dr. M

Ahhh, the magic of ginger for stomach upset is one of those old wives' tales that sounds too good to be true. But for me there has been nothing better to bring me back to feeling better whenever I feel just "plain rotten for no reason at all". I just boil an inch, or a "knob", of fresh ginger (sliced) in water to make a tea. It doesn't have to be very strong to bring almost instant relief. Some times I don't even take the time to peel it. Yes, ginger is surly one of nature's best medicines! Cheap too!
