Avoiding Errant Corn

Those recipes requiring the corn to be cut off the cob can pose the risk of errant kernels. I just cut off the corn in a large deep bowl. You can also cut the kernels off on a dish towel, but I think it's easier to rinse a bowl then wash a towel.


TRY A CHICKEN BREAST CUT UP SMALL IN A BOWL. ADD ONE LARGE HANDFUL OF SHREDDED CABBAGE AND A LARGE HANDFUL OF SHREDDED CARROTS. THREE STALKS OF CUT UP CELERY AND TWO GREEN ONIONS CUT UP. ADD TWO TBS OF MAYO AND MIX UP. I HAVE IT AT LEAST ONCE A WEEK. THE GIRL AT WORK CAN NOT KEEP HER FORK OFF MY PLATE! Note: Sounds like a great, simple chicken salad ---- and you could use a reduced fat canola mayo. Dr. M
