

Blue Cheese Turkey Burgers

1 lb ground turkey, mixture of breast and dark meat
2 oz blue cheese, crumbled
1 Tbsp Dijon mustard
1 bunch scallions (about 1 cup), chopped
1/4 cup dried breadcrumbs
1/4 tsp freshly ground black pepper
Whole grain buns or pita, slit and toasted
Lettuce leaves
Mix the first six ingredients in a bowl. Make into four patties. Grill, broil or pan fry. Serve on buns or pita with lettuce and whatever else you want. These are really good.
